Substitution Chart

: Mix together 1/2 teaspoon of black pepper, 1/2 teaspoon of white pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of ground cayenne pepper and 1/2 teaspoon of paprika to equal 1 tablespoon of Cajun spice

Chives, fresh: equal amounts of chopped green onion tops

Cornstarch: 2 tablespoons flour equals 1 tablespoon of cornstarch, or equal amounts of arrowroot

Corn Syrup: 1 cup white sugar mixed with 1/4 cup of water equals 1 cup of corn syrup

Corn Syrup, dark: 1 1/4 cup of dark brown sugar plus 4 tablespoons water equals 1 cup of dark corn syrup

Creole Mustard: Equal amounts of whole-grain mustard or hot mustard can be substituted, or Dijon mustard mixed with a little bit of horseradish

Cream of Tartar: 3 teaspoons of lemon juice or 3 teaspoons of vinegar equals 1 teaspoon of cream of tartar

Dry Breadcrumbs: 1/4 cup of crushed cracker crumbs or 2/3 cup of quick-cooking oats equals 1/4 cup of dry breadcrumbs

Dry Mustard: 2 teaspoons of prepared yellow mustard equals 1 teaspoon of dried mustard

Eggs: 1/4 cup of artificial egg product equals one whole egg

Fish Sauce: Equal amounts of light soy sauce can be substituted

Flour, all-purpose: 1/2 tablespoon of cornstarch or 2 egg yolks equals 1 tablespoon of flour

Flour, self-rising: 1 cup of all purpose flour mixed with 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda equals 1 cup of self-rising flour

Fresh Herbs: 1 teaspoon of dried or 1/4 teaspoon of powdered equals1 tablespoon of fresh herbs
