What's For Dinner?
An After-hours Valentine Dinner
By Allison Huller McAlister
Of course, steak should be served with a baked potato, but let's make it special. Indulge yourself this Valentine's Day by topping your potatoes with the works.

| Ingredients: 2 medium baking potatoes Butter or margarine Sour cream Shredded Cheddar cheese Imitation bacon bits Freeze-dried chives Salt and pepper to taste Scrub potatoes with a vegetable brush under cold water. Pat dry. Pierce potatoes several times with a fork. Potatoes can be baked in either the oven or the microwave. If baking in the oven, wrap potatoes in tin foil. Bake in a 450-degree F oven for about an hour or until potatoes are tender in the middle when pierced with fork. If baking potatoes in the microwave, cook for recommended time suggested for your particular microwave. (I cook mine by pressing "Potatoes" on my microwave.) When potatoes are done, remove from microwave, and wrap in foil until ready to eat. When ready to serve, unwrap potatoes, cut down the middle and top with suggested toppings. |
