Raising Money With Home-baked Goodies

Beat egg whites until stiff. Add sugar, lemon and water. Beat one minute. Color as desired.
Quick breads and muffins are other bake sale must-haves. Kathleen Sander from Newton, Mass., likes to make more sophisticated bake sale treats. Kathleen's Orange Poppyseed Cake makes five mini loaves that are a perfect size for smaller families.
Cake:
3 cups flour
2 1/2 cups sugar
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
3 eggs
1 1/2 cups milk
1 cup plus 2 tablespoons oil
2 tablespoons poppy seeds
1 1/2 teaspoons vanilla
1 1/2 teaspoons almond extract
Orange Glaze:
1/4 cup orange juice
3/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1/2 teaspoon oil
Preheat oven to 325 degrees F. Grease and flour two loaf or five mini-loaf pans.
Mix all ingredients for the cake until smooth. Pour into pans and bake 70 minutes. While cake is baking, make the glaze. Stir together all ingredients and warm on a low flame until sugar dissolves.
When a knife inserted into cake comes out clean, remove cake from oven and let cool 10 minutes. Spoon the glaze over loaves. Allow to set 30 minutes.
Also, remember that some customers may prefer pre-packaged baked goods. Include some non-homemade baked goods – perhaps donated from a local bakery – in the sale too.
