Magnificent Munchies
5 Healthy Snacks That Will Have Them Begging for More
By Donna Smith
In a small bowl, combine the peanut butter and mix-in of choice. Stuff the mixture inside the apple. Replace the plug. Serve.
A colorful treat that will tempt even the pickiest eater. Plus, it's a great way to sneak in another serving of vegetables!
6 ribs celery, cut into thirds
1 small carrot, peeled and grated
1 small yellow squash, grated
2 tablespoons finely chopped red bell pepper
1/2 cup whipped cream cheese
1/4 cup grated mozzarella or cheddar cheese
Combine the carrot, yellow squash and red bell pepper in a bowl. Use a paper towel to blot vegetables to remove any excess moisture. Stir in both cheeses. Mix well. Stuff the mixture into the celery. Sprinkle with additional grated cheese, if desired. Cover and refrigerate until ready to serve.
Healthy cottage cheese and pineapple stuffed in an ice cream cone is sure to be a hit. Don't forget the cherry!
Ice cream cones
Cottage cheese
Crushed pineapple, drained well
Maraschino cherries
Fill the ice cream cone 2/3 full with the cottage cheese. Fill the remaining cone with the drained pineapple. Top each cone with a cherry. Serve!
Variation: Instead of cottage cheese, fill the cones up with tuna or chicken salad. Top with grated carrot or zucchini, or chopped cucumber or tomato. Top with a grape tomato.
