Smokin' Hot Summer Cookouts
Flavorful Lean Meats Sizzle with Flavor

The intoxicating aroma of sizzling meats wafting from barbecue grills is a defining characteristic of summer. Outdoor cookouts bring people together for conversation and relaxation, not to mention good food and fun. Add these flavorful recipes to your next cookout menu.
A healthier version of this classic dish.
4 lean pork chops
3 tablespoons light soy sauce
1 teaspoon brown sugar
1 tablespoon lemon juice
2 cloves garlic, minced
Black pepper, to taste
In a plastic zipper bag, combine the soy sauce, brown sugar, lemon juice, garlic and black pepper, to taste. Seal and shake to combine. Add the pork chops and marinate in the refrigerator for at least two hours or overnight.
Remove chops from marinade and grill over hot coals for four to eight minutes per side, depending on thickness, until desired doneness is achieved. Baste with the marinade several times during cooking. Makes four servings.

Pork tenderloin is typically sold in packages of two. This cut has very little fat, so a little can go a long way.
2 pork tenderloins, about 1 1/2 pounds total
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 teaspoons dried rosemary, or 1 tablespoon fresh
4 cloves, garlic, minced
Salt and pepper, to taste
