It's Never Too Late for Those New Year's Resolutions

First, I keep a bowl of fresh fruit eye level in the refrigerator. My kids see it – and actually eat it! No more fruit morphing like a bad cartoon character in the vegetable bin before finding its way to the garbage can. Second, on Fridays we have a sweet after-school snack. A couple cookies, a piece of chocolate, a small slice of cake. My kids actually look forward to this and consider it a treat rather than a given. Third, I've invited my children into the kitchen. We bake, stir, measure, make a mess and talk together. We flip through new cookbooks (not my outdated one that calls for two sticks of "oleo" in almost every recipe) and make shopping lists together. We try new foods together.

My daughter confirmed that these tactics were working one day after her soccer game. When the coach handed her a candy bar and soda as the after-game snack, she brought it to me and said, "I'll save this for Friday, and maybe we should give Coach our recipe for Fruity Trail Mix." After my smile had faded, my mind began to race on how we could start our new project – a healthy family cookbook.

Fruity Trail Mix

1 cup low-fat granola
1/2 cup raisins
1/2 cup dried apricots, cut into cubes
1/2 cup dried cranberries or cherries
1/4 cup roasted, unsalted peanuts
1/4 cup carob chips or semi-sweet chocolate chips, optional

Combine all the ingredients. Store in an airtight container, or package in individual plastic bags for convenient, healthy snacks on the go.
