Spice It Up!
The Essence of Cajun/Creole Cuisine
By Ruth Brister
A Bottle of White, a Bottle of Red
No dinner for two is complete without a bottle of wine. While the whites match up best with fish and seafood dishes, the red or darker berry wines complement meats of deeper proportions, such as beef and veal. Today's vineyards are producing some of the best wines ever, and many are between $10 and $20 a bottle. Remember to enjoy your wine the way you enjoy your evening together: Take it slowly, so that it will be smooth. Savor each moment and pretend that it is your first and your last.
