The Many Faces of Chicken Salad
By Donna Smith
Chicken salad can also be served many different ways. If you're making it with pineapple or grapes, try serving it in a pineapple half. Stuff tomatoes or avocados with the salad and serve on a bed of lettuce. Lettuce-lined bowls work well, or how about a hollowed out loaf of French or Italian bread? Chicken salad is also wonderful served in pita bread or on a crunchy Kaiser roll.
Kid-friendly, Too
Most kids love chicken salad, even picky eaters. Toss whatever the child likes with the shredded or diced chicken and serve in a fun way. Most kids will eat it, or at least give it a try. If your child loves celery, try stuffing it with chicken salad. Let the kids pick what they want in their salad, then have them help prepare it. A kid usually can't wait to taste their creation and tell everyone, "I made it myself!" Below are just a few different ways to make chicken salad. The best chicken salad, however, is made with your favorite ingredients. Experiment and come up with a chicken salad that is all your own.
