Strategies to Make Your Picnic a Success

Creamy Garlic Hummus

1 can chickpeas
1/4 cup Tahini*
2 cloves garlic
2 tablespoons olive oil
1 to 2 tablespoons fresh lime juice
Salt, to taste
Pinch of paprika
Water, as needed

Blend the chickpeas, tahini, garlic, olive oil and lime to a smooth paste, adding a little water if necessary. Season with salt and sprinkle with a touch of paprika as garnish. Store in a tightly sealed jar in the refrigerator.

*Tahini is a creamy puree made from sesame seeds and is frequently used in Middle Eastern cuisine. These days, it is easily available at regular grocery stores.

Salads: Salads are a great substitution for a side dish and can be extremely delicious when combined with the right ingredients. Try using whole grains or pasta as a base for a more hearty salad. Don't be afraid to play with contrasting flavors and combine various textures for a party on the palate. If you wish to customize flavors for each of your guests, a good tip would be to carry along different flavored dressings and allow everyone to choose as they please. A big platter of mixed fruit topped with nuts not only can be served as a side, but is also a welcome treat for dessert.
