Eating Outdoors
Healthy Summer Picnics and Barbeques
It's outdoor eating time! You've been waiting all year to pack that cooler and head to the beach, the lake, the park or just the backyard.
If you're not really into cooking, serve some easy and tasty sandwiches, salads and platters – you can't go wrong with a great big sub packed with different lean meats and vegetables.
But if you're grilling, be creative. Burgers and hot dogs are old hat. Here are some ideas from eDiets.com Chief Nutritionist Susan Burke on how to be original and keep everyone healthy and happy too.
Break out the barbeque: Stick to lean cuts, like sirloin, instead of fatty ribs and hamburgers. Cook chicken and meat until no longer pink in the center.
Skin isn't in: Take the skin off the chicken, because that's where most of the saturated fat and cholesterol is. And try some new birds – squab, Cornish hens, even turkey cutlets are great on the grill.
Where's the beef? Hamburgers are ... boring! Try turkey burgers, which have the lowest fat and calories, or even fish burgers. Salmon and tuna burgers are also delicious.
