Dim Sum

Delicacies to Tempt Your Taste Buds

In American we have appetizers, in Spain it's tapas. But the Chinese call their delicious appetizer-size delicacies dim sum, which translates to "touching your heart." Dim sum not only touches your heart, but also pleases your taste buds. Try our delicious recipes and experience this delicious Cantonese custom in your own kitchen.

Sweet Roasted Pork

2 pounds lean pork butt, cut into 1-inch strips
4 tablespoons soy sauce
2 tablespoons honey
2 tablespoons oyster sauce
1 tablespoon bourbon
3 tablespoon hoisin sauce
1/2 teaspoon five spice powder
Salt and pepper, to taste

Combine the soy sauce, honey, oyster sauce, bourbon, hoisin sauce, five spice powder, salt and pepper. Set aside.

Arrange the pork strips in a foil-lined roasting pan in a single layer. Pour the marinade over the top. Cover and refrigerate for at least four hours.

When ready to cook, preheat the oven to broil. Uncover the pan and place in the oven. Cook for 40 to 50 minutes, basting every 10 minutes. Remove with meat is cooked through, cool slightly and serve.

Radish Cakes

2 pounds white radishes
1 1/2 cups rice flour
2 tablespoons wheat flour
2 tablespoons water

Trim and peel the radishes, then cut into a small dice. Put into a food processor and pulse until it's pureed. Pour into a large bowl. Add the flours and water. Mix well.

Pour the mixture into an 8-inch square baking pan. Place the pan in a steamer basket and cook 25 to 30 minutes. Cake is done when a knife inserted into the middle comes out clean. Remove and allow to cool completely, and then cut into small squares.
