Substitution Chart

Salt, kosher: Equal amounts of coarse salt or pickling salt

Semi-sweet Chocolate: 1 square of unsweetened chocolate plus 1 tablespoon white sugar equals 1 ounce semi-sweet chocolate

Sherry, dry: equal parts of dry vermouth

Sour Cream: 1 cup of cottage cheese blended with 2 tablespoons of milk and 1 tablespoon of lemon juice, or 1 cup of yogurt equals 1 cup of sour cream

Sugar, white: 1 cup of packed brown sugar or 2 cups of powdered sugar equals 1 cup of white granulated sugar

Tapioca: 2 tablespoons all purpose flour equals 1 tablespoon tapioca

Tartar Sauce: Mix together 1/2 cup mayonnaise, 1/4 cup pickle relish and 1 teaspoon lemon juice to make 3/4 cup of tartar sauce

Tomato Juice: 1/2 cup of water mixed with 1/2 cup of tomato sauce equals 1 cup of tomato juice

Tomato Sauce: 3/4 cup of tomato paste mixed with 1/4 cup of water equals 1 cup of tomato sauce

Unsweetened Chocolate: 3 tablespoons of cocoa powder plus 1 tablespoon shortening equals 1 ounce of unsweetened chocolate

Vinegar, apple cider: Equal amounts of raspberry vinegar or rice vinegar can be substituted

Whole Milk: 1/2 cup of evaporated milk plus 1/2 cup of water equals 1 cup of whole milk

Wine: Equal amounts of apple juice, broth or water can be substituted
