What To Do With Your Leftover Turkey

"I can never remember anyone in my family ever putting stuffing inside the turkey," says Barbara. "I remember my mother saying it wasn't worth the risk, plus she said her stuffing was so good by itself, it didn't need any help from the turkey!"
Take the meat off the bone as soon as you are done with dinner. Place the turkey meat in plastic containers and put them directly into the refrigerator or freezer. The leftover turkey meat can be refrigerated for about three to four days, and frozen for up to one month.
"You can freeze the turkey in containers – put the amount you would use in a recipe in each container," says Angela. "Freezer containers or plastic freezer bags work. Then you can use it later to make turkey noodle soup, casseroles or anything you would use cooked chicken in."
Before Thanksgiving, pick out a couple of recipes in which you can use your leftover turkey. When deboning your turkey, shred, dice or chop the meat according to the recipe you are using, and place the amount the recipe calls for in your storage bag or container. Make sure to write the name of the recipe on the outside of the bag or container with a marker.
Now, what do you do with that turkey carcass sitting on the white embossed turkey platter you just had to have? Don't thow it away!
