Organic Produce Packs a Nutritious Punch

Duda buys her produce at a local co-op. "I save a lot of money on in-season produce, as they usually stock a lot when it's in season, and the prices are actually better than the price of the regular produce in mainstream markets," she says.

If you don't have a local farmer's market, Hemmelgarn says to grow what you can. "Even if it's just a few containers of cherry tomatoes on your back porch," she says. "A small garden will supplement your diet with affordable, disease-fighting, great-tasting foods."

Organic Tomato and Basil Soup

Jacqueline M. Duda shares one of her favorite organic recipes.

20 to 25 medium to large organic tomatoes, use a combination of red, yellow and orange for full flavor
5 to 6 large leaves of organic basil, chopped fine
Organic sea salt
Organic pepper
1/2 cup organic heavy cream

Place whole tomatoes in a large stockpot over medium high heat. Allow tomatoes to cook down until they give off their liquid. Using a fork, pull skins off tomatoes. Discard skins. As the tomatoes become liquid in consistency, watch for burning on the bottom and stir often. Turn heat down to medium low. Add the basil and season with the sea salt and pepper, to taste. As the soup becomes creamy in consistency, slowly add 1/2 cup of heavy cream and continue stirring until completely blended. Garnish with additional basil leaves, if desired. Serves six.
