Got Soy?
The Many Health Benefits of Soy
By Kim Delmar Cory
. "Many carry soy milk now, too." Melanie also buys some of her soy products through online health food stores such as Dixie's Diners' Club, PlanetVeggie.com, WholeFoods.com, and Walnut Acres Organic Farms.
Kalli, Melanie's two-year-old daughter, is a vegetarian and enjoys eating soy products. "We eat lots of tofu...plain, made into tofu sour cream, frozen in Popsicles, cooked in stir fries, mashed into veggie burgers, blended into puddings, etc," says Melanie. In fact, Kalli had never had meat so she doesn't know the difference between soy and meat. "My favorite is probably dried TVP/TSP (textured vegetable protein/textured soy protein), though, which I rehydrate and use in my cooking. I've actually fooled meat eaters with it!"
Melanie says the easiest way to add some soy to your diet is with soymilk. Use it in place of regular cow's milk for drinking and for cooking. Serving soy hot dogs and yogurts, and preparing pizza with soy cheese are other ways to get your family eating soy.
Soy flour gives a surge of protein to pncakes. Replace one-fourth to one-third regular flour with soy flour in recipes for muffins, cakes, cookies and pancakes. Soymilk is found in non-refrigerated form, but is also available in the dairy case at the local grocery. Soy margarine, nuts and oils are common forms of soy than can surreptitiously be integrated onto the dinner table. Season poultry, meats, soups and sauces with HVP (Hydrolyzed Vegetable Protein) instead of other salt-based flavor enhancers. Don't forget nondairy soy frozen dessert for a meal finale.
