Got Soy?
The Many Health Benefits of Soy

Meat alternatives, such as tofu, are a simple way to weave soy into menus. Tofu is soybean curd and boasts a benign flavor. Tofu has the amazing ability to absorb flavors from the foods it's cooked with. Its nutrients include a high-protein base and B vitamins. Look for tofu at supermarkets in hard or soft form. Try using the soft form as an ingredient in the next batch of salad dressing you whip up. It's highly versatile.
"Probably our favorite dish is tofu chili, but I don't make it very often because the best tofu to use is fried and chewy, a bit fattening," says Melanie. "The local Chinese place makes a terrific vegetables and bean curd (tofu), and I also have a recipe for tofu spaghetti balls that I bring to playgroup sometimes. Everyone loves them!"
The next time you are jotting down thoughts for your grocery list, don't forget to include a sufficient number of nutritionally packed items containing soy. Your family may be in for a pleasant surprise.
