A Soothing Comfort Food for Moms-to-be

O'Shea says minestrone, garden vegetable, wild rice with chicken and the classic chicken noodle are great choices for moms-to-be. But she encourages them to use their imaginations. "Craving something spicy? Throw some salsa in with your vegetable soup," she says. "Feel like something warm and bland? Chicken with rice might be just the thing. Remember that pregnancy is a time when food cravings, aversions and intolerances can cause challenges at mealtime – and in between. Soup can be a great way to get some very important nutrient benefit in a very warm and soothing form."

Here are some satisfying soup recipes moms-to-be (and dads-to-be!) will love.

Chicken Soup Ole

What You Need:
3 to 4 cups shredded, cooked chicken
2 tablespoons oil
1 onion, chopped
4 garlic cloves, minced
1 jalapeno, seeded and minced
1 container (32 ounces) low-sodium chicken broth
1 bag (16 ounces) frozen corn, thawed
1 can (15 ounces) black beans, drained and rinsed
1 lime
1/2 cup chopped, fresh cilantro
Salt and pepper, to taste
Tortilla chips

What To Do:
Heat the oil in a Dutch oven. Add the onion, garlic and jalapeno. Cook, stirring, about four minutes or until soft.

Add the shredded chicken, chicken broth, corn, black beans, lime juice, salt and pepper. Bring to boil, reduce heat and simmer about five minutes. Stir in cilantro. To serve, ladle into soup bowls and top with crushed tortilla chips.

Italian Wedding Soup

What You Need:
1/2 pound lean ground beef or turkey
1 egg
2 tablespoons breadcrumbs
2 tablespoons grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
6 cups low-sodium chicken broth
1 cup orzo
2 cups chopped escarole
1/3 cup grated carrot
