Kelly Preston's Crispy Chicken
This is a favorite kids' recipe in the Preston-Travolta household!
"It's like fried chicken, but it's not fried," Preston says. "It's great especially for wheat and dairy intolerance."
In a food processor, put rice crackers and natural corn chips – such as Barbara's Natural Corn Chips – and make a breading. Beat some eggs in a bowl, and add some salt and pepper or other seasonings you like. Note: Make sure the seasonings do not contain chemicals or MSG.
Cut up some pieces of organic chicken and dip them into the egg mixture. Put the chicken into the breading mix and coat each piece. Bake the chicken in a 350 degree F oven until they are done (depends on your oven and the size of the pieces).
