What's For Dinner?
A Perfect Holiday Meal

| Ingredients: Preheat oven to 325 degrees F. In a large pot, boil the zucchini until tender; drain. Meanwhile, heat the olive oil in a medium skillet over medium heat. Saut矴he onion and garlic in the oil until the onion is tender. Combine the zucchini, onion and garlic in a 2-quart casserole dish; mix well. Pour the spaghetti sauce over zucchini mixture and stir well. Top with the mozzarella cheese. Bake in preheated oven for 20 minutes, or until heated through and cheese is bubbly. Makes 4 to 6 servings. |
Homemade Macaroni and Cheese
Though probably not a traditional sight at most holiday meals, my husband grew up having homemade macaroni and cheese as a regular on his special occasion dinner menu. I've tried a few different recipes out over the years, and this one is the best I've found so far. We love it so much that I usually double the recipe for the holidays, so that we'll enjoy the leftovers for a few days afterwards. It takes a little time to prepare, but it's well worth the effort, I promise.
