It is so nice to be cooking again. The new kitchen is great for cooking, more counter space, bigger refrigerator, a pantry cabinet with pull out shelves. I've never begrudged my husband the money he needs to spend in order to do good work and I should have the same attitude towards my own work. We all should.
But this afternoon for lunch I did not cook. I met my husband downtown for a date since my little 21-month-old, Kipp, goes to a friend's house on Thursdays -- and I can get caught up.
Today for lunch I had wonderful grilled polenta. Polenta is something I was introduced to when I was 17 years old and a foreign exchange student to Paraguay, South America. The mother of the family I stayed with was a wonderful cook and she always made her young daughters the creamiest, most delicious polenta. I've loved it ever since, but my attempts to make it have always been rather lumpy -- I can never find quite the right ingredients here in Minnesota to duplicate the delicacies I had in South America. Not the right corn meal, not the right cheese, etc. But I'm going to experiment again, because I think it is a food Kipp would enjoy. Once I've found a good recipe, I'll share it with you. The grilled polenta I had for lunch today is one of the few vegetarian entrees I find completely satisfying.
Now I need to take advantage of the rest of my Thursday "off" from mothering and continue to try and get the new house squared away. I still cannot find where my father, who unpacked my kitchen boxes, put the corn starch!
