Expert Q&A

My asparagus is always mushy. What am I doing wrong?

You're overcooking them. Here's how to make perfect asparagus:

First, wash your asparagus and snap the woody bottoms off individually with your hands – don't use a knife. Then using a steamer basket inserted into as tall a pot as you have, steam your asparagus standing as upright as possible. When they are bright green, pull them immediately. They still might be a little crisp, but they will continue cooking a little and they'll be just right.

Another tip is to buy the thinnest asparagus you can find. I find they cook much better than those great big old thick things!
