Can you make potato latkes ahead and reheat?

Yes. They should hold for a day or so in the refrigerator and then be reheated. Texture on the outside may not be as crisp however. I made latkes recently in a great way where you boil the whole potatoes first until they are almost tender. Then grate them, add egg, flour, etc., to grated cooked potatoes and make patties. Yummy and tender. Also don't need as much oil or time for frying that way!
