How can I reduce the fat in au gratin potatoes and macaroni and cheese?

You can make just about any recipe substituting soy milk and soy cheese, but keep in mind that it won't necessarily be much lower in fat unless you choose low-fat varieties. Be sure to read labels when you go shopping. If fat content is your only concern, you can also choose low-fat dairy products to make your recipe.

As for macaroni and cheese, my favorite low-fat, nondairy mac n' cheese comes in a box from Road's End Organics. I've seen it in health food stores and at a variety of health food retailers on the Web, too.
