How can you tell a pecan pie is done?
Pecan pies are tricky. There are two schools of thought. One is a lower oven about 325 degrees F and a cooking time of 40 to 50 minutes, and at 40 minutes checking the pie and shaking it to see how much it wiggles. It if wiggles too much, cook it another 10 minutes. Pecan pies need a lot of cooling time and are best if made a day in advance. The skewer test does not work for this type of pie."
