How do you keep roasted asparagus green?
According to the Michigan Asparagus Advisory Board, asparagus loses its color after being cooked for much longer than 10 minutes. If you want to save the beautiful green color, the solution is simply to cook it for a shorter period of time, or add it later in the cooking process. Unfortunately, if you prefer asparagus very soft, you'll have to cook it longer. Since many of us grew up on canned asparagus, which practically falls apart in your mouth, it can take some time to get used to the fresh crunch when it's only lightly cooked.
