How do you make a red wine reduction?
Red wine reductions can accompany many dishes. The secret is to really let the wine cook down, which means to reduce it by at least half from what you start with.
The best thing to add as far as flavor goes is shallots and garlic. The secret ingredient that removes the bitterness of red wine reductions is veal stock, which can be bought at most butchers. However, if you can't get it and don't want to make it, chicken stock does help but will not smooth it out like veal stock.
And this is not a good time to use cheap wine. Your wine reduction only has a couple of ingredients. If you select cheap wine it won't taste good, so use wine that you would like to drink. This is a great sauce to make because there really is no right or wrong way to make it. Some people add butter for the smooth texture; however, it is not necessary."
