How do you make homemade chicken stock?

There are thousands of recipes for homemade chicken stock -- each one unique. Saute some onions, carrots and celery in butter or olive oil in a large pot. Add generous amounts of fresh herbs -- parsley, thyme, marjoram and a bay leaf or two. Put in chicken parts (you can use necks or backs if you wish, or use breasts and thighs and then remove meat from bones after stock is finished) and fill pot with water. Bring to boil, reduce heat to simmer and let simmer 45 minutes or so. Strain and store in the refrigerator or use right away.
