How do you make potato soup?

There are many ways to make potato soup. The most basic involves peeling two potatoes, chopping two onions and four ribs of celery and sauteing these in butter. Add boiling water to cover, some salt and a bay leaf and simmer until tender. Thin soup to desired consistency with light cream or stock and garnish with chopped chives. There are some fun nondairy versions of potato soups in my book Feeding the Whole Family where a bit of cashew butter is used to add creaminess.
