How do you prepare the juice that accompanies prime rib?

After the prime rib (also know as standing rib roast) comes out of the oven, allow it to sit on a carving board for about 10 minutes. The juice will continue to drain and you can use that for a simple gravy or au jus as it is called.

Drain off almost all of the fat and place the roasting pan on a medium-high burner. Start scraping up the bits of browned roast from the bottom of the pan and add either 1/4 cup water or some canned beef broth to your heated mix, turn down the heat to low and salt and pepper lightly to taste and heat until it starts to almost boil, about two minutes. Serve ladled over pieces of prime rib.
