Expert Q&A

By Cynthia Lair
Nutritionist

I made some gumbo and it's way too spicy. What can I do?

Unfortunately, the potato trick won't work for too spicy of food. If you can sneak a little sour cream in without wrecking the gumbo, try that. The milk proteins actually bind with the heat element and cause it to mellow some, although it won't completely tame it. At this point, it's better than nothing though!

Editor's Note: Sometimes if you over-salt foods such as soups and stews, adding a potato will actually absorb some of the salt.
