Is the mineral and vitamin content of the sea vegetable dulse lowered by cooking it?

Yes, both heat and water will dissipate some of the vitamin and mineral content. But dulse is so much higher in minerals than most land vegetables I wouldn't be too concerned. Cooking increases the digestibility so that more of the nutrients can be assimilated."
