What does it mean to "season" a frying pan?

It is something that is done to smooth out the microscopic roughness of new pots and pans, particularly cast iron, which can cause foods to stick to the cooking surface. This is normally done by coating the cooking surface with vegetable oil, then heating the pan in a 350 degree F oven for about an hour. Continuous use and gentle cleaning will improve the seasoning. Pans may occasionally need re-seasoning.
