Can a child eat too much lettuce?

Yes, lettuce is somewhat difficult to digest, as we humans can't digest plant cellulose very easily. This does not translate to lettuce being bad for us, however. Eating a lot of lettuce increases the roughage in the diet. This helps to move food along the bowel. It is theoretically possible to eat too much lettuce, but it would be hard to do, and one or two salads per day is certainly not too much. I would continue to encourage your children to eat salads.
