Can you take too much of one vitamin?

You most definitely can overdo it with vitamins, even the water-soluble vitamins that your body does not store: When you consume too much they can take their toll before the body excretes them. A case in point is Niacin, a B vitamin that, in very large doses, causes flushing of the skin, tingling and itching. Better to eat a well-balanced diet, take a multivitamin with 400 micrograms of folic acid daily, and get regular physical exercise.
