I have heard that vegetables lose their vitamins and nutrients the longer they sit. Is that true? How can I store them where they'll last longer?
Yes, most fruits and vegetables do lose their vitamins the longer they are stored. Most last five to seven days in the refrigerator. Things like apples and oranges will last up to three weeks in the refrigerator. If you want them to last longer, the best method would be to freeze them the day after you purchase the vegetables. This method does work especially well when you find a good deal like peppers six for $1. Frozen vegetables do not lose their vitamins once frozen like refrigerated vegetables do."
