Is millet a whole protein? How can I incorporate this grain into my diet?
No grain contains all eight amino acids in the proper proportions to create a complete protein. Quinoa comes the closest. You still must combine the grain with a nut or legume to form the complete protein. I believe that millet does come puffed in a cereal form but this is not the most nutritious form to eat it in. Try simply simmering the grain as you would brown rice. Then dress it with a lemon-olive oil dressing. Add your favorite fresh herbs and vegetables, toasted nuts or seeds and try it for lunch. Another way is to simmer the grain in apple juice and serve it with apple butter, toasted almonds and a bit of butter for a yummy breakfast porridge."
