Which vegetables are the best for my picky eater?
If I had to narrow it down to just a few vegetables, I would have to say that sweet potatoes, leafy greens (such as kale and swiss chard) and broccoli are the winners. Thankfully, most kids love sweet potatoes, and just about any recipe that calls for potatoes can be made with sweet potatoes. You can make greens more palatable by stir-frying them in oil with a little soy sauce and garlic. Broccoli is wonderful with a cheese sauce. Keep in mind that a child might have to try something 10 times or more before he'll eat it, so don't give up!"
