Cheesy Asparagus Squares
Ingredients
1/2 cup chopped onion
2 garlic cloves, minced
2 cups grated cheddar cheese
1/4 cup dry breadcrumbs
1/4 cup minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1/8 teaspoon hot pepper sauce
4 eggs, lightly beaten
1 pound of fresh asparagus, trimmed and cut into 1/2-inch pieces
Directions
In a skillet, saute the onion and garlic in a small amount of oil until tender. Combine the cheese, breadcrumbs, parsley, salt and pepper, oregano, and hot sauce. Mix well. Stir into onion mixture along with the eggs.
Meanwhile, cook the asparagus in a small amount of water until crisp-tender. Stir into the cheese mixture. Pour into a well-greased square baking pan. Bake at 350 degrees F for about 30 minutes. Let them cool slightly, then cut into small squares. Serve warm or at room temperature.
