Quick Asparagus Soup
Ingredients
1 onion, chopped
3 tablespoons butter
1 pound fresh asparagus, trimmed and cut into small pieces
1 1/2 cups chicken or vegetable broth
1 cup milk
1/4 teaspoon garlic powder
Pepper, to taste
Directions
Melt the onion in a large saucepan. Add the onion and cook until soft. Add the asparagus, broth, garlic powder and pepper to taste. Cook on low heat until asparagus is tender. Pour the mixture into a blender and puree until smooth. Stir in the milk. Pour back into the saucepan and heat through. Taste and season again with salt and pepper, if desired.
