Amy's Little Cheese Moons

Ingredients
1 3/4 cups grated cheddar cheese
1 cup whole-wheat pastry flour
5 tablespoons soy margarine
Cinnamon
Directions
Preheat oven to 400 degrees F. Coat with vegetable oil and lightly dust with flour a cookie sheet. Grate cheese in a food processor, then remove and measure. Return cheese to processor and add flour and margarine, cutting it into several chunks. Process with the metal blade for about 30 seconds or until a fairly smooth dough is formed. Dust your hands with flour to keep things from getting too sticky. Take tablespoons of dough and form into a patty about 1/8-inch thick (if you make them thicker, they won't taste quite as nice). Cut with a moon cutter (or use a knife like me and just free hand it) and place on the cookie sheet. Create many moons this way, using all the dough. Dust each moon with cinnamon and bake for about 10 minutes. Let cool on sheet before removing.
