Potato Cheese Soup
Ingredients
3 medium potatoes, peeled and quartered
1 onion, chopped
1 cup water
1 teaspoon salt
3 cups milk
3 tablespoons margarine, melted
2 tablespoons flour
3 tablespoons chopped fresh parsley
Pepper, to taste
2 cups grated Swiss cheese
Directions
Bring potatoes, onion, water, and the salt to a boil. Reduce heat, cover, and simmer until potatoes are tender. Do not drain. Mash slightly with a fork. Stir in milk. In a small bowl, combine the margarine, flour, parsley and pepper. Stir this into the potato mixture. Cook and stir over medium heat until thick and bubbly. Remove from heat and stir in cheese.
