Charlie Lee's Chicken Chow Mein Casserole
Recipe is from Aunt Bee's Mayberry Cookbook
Ingredients
Butter
1 cup finely chopped celery
1 medium onion, chopped
2 cans (10 1/2 ounce each) cream of mushroom soup
1 can (4 ounces) sliced mushrooms
1/2 cup cashews, unsalted
2 whole or 4 individual chicken breasts, cooked and cut up
1 can (12 ounces) chow mein noodles
Directions
In a skillet melt a small amount of butter and cook the celery and onion until tender and the onion is transparent. Add the mushroom soup, drained mushrooms, cashews, and chicken pieces. Mix well. The casserole may be frozen at this point if desired.
Turn the mixture into a large casserole dish. Bake uncovered in a 350 degree F oven for 45 minutes. Remove from the oven and add three-fourths of the chow mein noodles. Mix well and bake for 10 minutes. Sprinkle the remaining noodles over the top and bake five minutes more minutes.
