Matzah Balls
Ingredients
5 eggs
1 cup matzo meal
1 teaspoon salt
1/8 teaspoon pepper
Directions
Beat eggs until light and fluffy. Gradually stir in matzo meal and remaining ingredients. Let stand for about 15 minutes. With wet hands, form into balls the size of walnuts, and gently drop into a large pot of lightly boiling water. Cover and simmer over low heat for 20 minutes. Makes approximately 16 balls.
Suggestions
Great served in chicken soup, or just plain chicken broth.
