Panini: The Italian Grilled Cheese
Ingredients
For one sandwich:
A crusty roll or bread, some good choices: Ciabata, Focaccia or seasoned Panini bread
Extra virgin olive oil
3 slices mozzarella
Diced red onions
1/2 a tomato
Freshly ground pepper
Sea salt
Optional: Single slice of an Italian aged meat like prosciutto
Directions
Drizzle olive oil onto both outside parts of the bread. Layer the cheese, tomatoes, onion and meat (if any) onto the bread like a sandwich. Drizzle a bit of olive oil in a saute pan or cast-iron skillet. Add sandwich directly into the pan, cooking over a medium heat, cover. Let cook for three to four minutes, or until golden brown. Flip with a spatula and continue cooking the other side. Press down on the sandwich with the spatula to flatten it a bit. Remove from pan and serve sliced in half.
Suggestions
Serve with a mixed salad.
