Mixed Green Salad
Ingredients
Fresh greens like romaine lettuce, baby spinach or mixed greens
Fresh mozzarella, sliced into disc shapes
Tomatoes, sliced into thick discs
Dressing:
Balsamic vinegar
Extra virgin olive oil
1 teaspoon lemon juice
Salt and freshly cracked pepper
Directions
Pile greens onto plate, adding tomato and mozzarella slices onto top. In a small, lidded container combine equal parts vinegar and olive oil with juice, shake vigorously and drizzle atop the salad.
Suggestions
Serve with a crusty panini sandwich.
