Applesauce Cookies
A great after school snack!
Ingredients
1 cup brown sugar, packed
3/4 cup shortening
1 egg
1/2 cup applesauce
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup raisins
1/2 cup chopped pecans
Directions
Combine the butter, sugar and egg until smooth. Stir in the applesauce. In another bowl, combine the flour, baking soda, salt and cinnamon. Slowly add this to the applesauce mixture. Stir in the raisins and nuts. Drop by rounded teaspoons onto lightly greased cookie sheets. Bake at 375 degrees F about 10 minutes. Remove and cool.
Suggestions
Serve with a tall glass of milk for a healthy snack.
