Swedish Tea Cookie Sandwiches
Ingredients
Cookie:
1 cup butter
2 cups flour
1/3 cup cream
1/3 cup granulated sugar
Frosting:
1/2 cup butter
1 1/4 cups confectioners' sugar
3 tablespoons evaporated milk
1 1/2 teaspoons vanilla extract
Directions
Using two butter knifes, cut the 1 cup of butter with the flour until it resembles coarse crumbs. Slowly stir in cream to form a dough.
Roll dough out into a half-inch thick disc. Using a small, round cookie cutter, cut out circles. Roll in the granulated sugar and place on cookie sheets. Bake at 375 degrees F for eight to nine minutes. Remove to wire rack and cool completely.
To make frosting, beat the 1/2 cup butter until fluffy. Slowly add the powdered sugar, milk and vanilla. You can adjust the milk to get the consistency you prefer.
To assemble cookies, frost the top of one cookie, then top with another to make a sandwich. Serve.
