Shrimp and Asparagus Toss
Ingredients
1 pound fresh asparagus
1 package (16 ounces) egg noodles
5 cloves garlic, minced
1/2 cup olive oil
1 cup butter or margarine
1 tablespoon lemon juice
1 pound shrimp, peeled and deveined
1 package (8 ounces) fresh mushrooms
3/4 cup grated Parmesan cheese
Salt and pepper to taste
Directions
Steam the asparagus until crisp-tender. Chop into bite-size pieces.
Cook pasta according to package directions. Set aside.
In a skillet, heat the olive oil. Add the garlic and cook until garlic is lightly browned. Do not burn! Add margarine and lemon juice. When margarine melts, add the mushrooms. Cook until softened. Add shrimp and cook until pink. Add asparagus. Toss the shrimp mixture with the cooked egg noodles. Stir in grated Parmesan cheese. Season with salt and pepper to taste. Serve immediately.
Suggestions
Substitute your favorite pasta for the egg noodles. Fettuccine, angel hair and linguine work well.
