Asparagus and Mushroom Quiche
Ingredients
3 cups fresh asparagus pieces
1 cup biscuit baking mix
3 eggs
1 cup grated cheese (cheddar, Swiss, Monterey Jack or Colby work well)
1/2 cup chopped green onions
1/2 cup olive oil
1 package (8 ounces) fresh sliced mushrooms
Directions
Combine all ingredients. Mix well. Pour into a greased and floured 9-inch pie plate. Bake at 350 degrees F for 30 to 40 minutes.
