Butter Bean Spread
Ingredients
2 cups fresh, cooked butter beans
Juice and zest of half a lemon
1 clove garlic, minced
1 tablespoon fresh, chopped mint
1 tablespoon olive oil
1 tablespoon water
Salt and pepper, to taste
1 French baguette
Directions
Place all the ingredients except baquette in a food processor or blender. Pulse until smooth, adding more water, if needed, to reach desired consistency. Season with salt and pepper.
Suggestions
Serve with toasted French bread slices.
